EMILY VINCENT,

Founder & CEO
Emily Vincent, RN, BSN, PHN, is the Founder and CEO of LivestockDoc™. She is a cardiac intensive care nurse at NewYork-Presbyterian/Weill Cornell Medical Center with more than 14 years of critical-care experience. Her work has included clinical leadership, nursing informatics, policy development, performance improvement, and education.
A two-time DAISY Award recipient, Emily brings a critical-care nurse’s discipline of observation, escalation, and precise documentation to livestock health.
Outside the ICU, Emily is the owner and operator of Two Rock Ranch in Berne, New York—home to more than 400 White Dorper sheep and one of the largest registered White Dorper flocks on the East Coast.
After nearly two decades of farming and facing livestock emergencies when veterinary care was not immediately available, she founded LivestockDoc™ to help farmers recognize concerns sooner, document care clearly, and strengthen their connection with veterinarians.
LivestockDoc™ was born at the intersection of Emily’s two worlds: critical care and the farm.

Vijay Kapse
Technical Co-Founder
Vijay Kapse is the Technical Co-Founder of LivestockDoc™, bringing expertise in data science, applied machine learning, software architecture, and full-stack product development. He earned his undergraduate degree in Data Science from the Indian Institute of Technology Madras and has contributed to Binghamton University’s entrepreneurship ecosystem through the Koffman Southern Tier Incubator’s Soft Landing New York program.
Vijay’s experience includes developing AI-enabled tools across healthcare, medical imaging, education, and agriculture, along with project work involving large-scale microbial datasets for NASA-related research. At LivestockDoc™, he leads the technical architecture and development of the platform, translating complex clinical and livestock-care requirements into practical, scalable software for farmers and veterinarians.
Vijay’s ability to anticipate the data, infrastructure, and engineering needs behind an ambitious product complements Emily’s critical-care and livestock expertise—turning the LivestockDoc™ vision into technology that can work wherever livestock care happens.

Emily Bristol, DVM MPH
Veterinary Advisor
Emily Bristol, DVM, MPH, is a practicing mixed-animal veterinarian at Cobleskill Veterinary Clinic with more than seven years of experience in livestock health and disease management. A 2017 graduate of the University of Missouri College of Veterinary Medicine, she also holds a Master of Public Health and brings a global public-health perspective shaped by zoonotic-disease fieldwork in Zambia. As LivestockDoc™’s Veterinary Advisor and board member, Dr. Bristol provides scientific oversight and practical clinical insight to ensure its content and guided decision pathways remain evidence-based, animal-welfare-centered, and grounded in the realities livestock producers face.
When she isn’t practicing veterinary medicine, Emily enjoys hiking with her husband and their dogs—and transforming houses through home-renovation and house-flipping projects.
